The Rosso di Montalcino Poggio Salvi comes from the
younger Sangiovese Grosso vineyards of Sesta .
Fermentation: about 10-12
days on the skin at controlled temperature below 28° C
in 150 hl wide and short stainless steel tanks, designed
and built for the purpose of obtaining a delicate tannin
and colour extraction. The wine matures in Slovenian
oak casks for 12 months and then is ready to be drunk,
young and fruity.
Tasting notes: A wine of great finesse and structure
with an intense, mature bouquet of a variety of fruits,
pleasant vinous freshness woven with the scents of the
oak. Flavourful and complex, it has a very fruity body
enriched by spicy oak nuances emerging from a background
of noble tannins. The colour is deep ruby red, with youthful
violet hues.
Recommended food combination: The perfect accompaniment
for traditional Tuscan cuisine, but excellent also with
international cuisine. It is superb with pasta, poultry,
risotto, dishes with pork and veal.
